ZUCCHINI AND BLACK-EYED PEAS 
2 zucchini
1 can black-eyed peas
3 cloves garlic
1 small onion
kosher salt
black pepper
1 tbsp. olive oil
cilantro and sassoon seasoning (optional)

You will need a large frying pan or wok.

Dice zucchini into sizes almost the same as black-eyed peas and put aside. Dice garlic and onion. Fry onion until glazed, add garlic. Fry 1 minute; add zucchini. Fry 3 minutes; add black-eyed peas, season salt and pepper (may need a little water). Serve with some fresh cilantro.
