MANDARIN ORANGE DELIGHT 
2 (11 oz.) cans mandarin oranges
1 tbsp. gelatin
2 c. milk
1 pack instant vanilla pudding
2 tbsp. rum or rum flavoring
1/2 c. finely chopped nuts
1 c. cream, whipped (opt.)

Drain oranges; keep 1/2 cup juice. Cook gelatin in juice for 5 minutes. Add to prepared pudding mix. Add 1 1/2 cups orange segments, keeping rest for decorating top. Add rum and nuts. Fold in whipped cream. Either pour into mold or pour into pretty dish. Chill until firm. Unmold and decorate with rest of orange segments or serve decorated with orange segments. You may use Cool Whip instead of cream.
