APPLE BEEF BALLS 
1 lb. ground beef
1 c. grated fresh apples
1 c. dry bread crumbs
1 c. tomato juice (or substitute cream of celery soup thinned with milk)
2 eggs, beaten
1 1/4 tsp. salt
1/2 tsp. pepper

Mix together meat, grated apples, bread crumbs, eggs, and seasonings. Form into 1 1/2 inch balls and place in a casserole. Cover with cup of tomato juice or cream of celery, thinned. Bake 1 hour at 375 degrees. It may be necessary to add more juice before baking is completely. Serves 3-4.
