OATMEAL - CINNAMON CAKE 
CAKE:

1 c. oatmeal
1 1/2 c. boiling water
1 c. brown sugar
1 c. white sugar
1/2 c. shortening (oleo)
1/4 tsp. salt
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda

TOPPING:

6 tbsp. butter
1/4 c. milk
1/2 c. brown sugar
1 tsp. vanilla
1 c. nuts, chopped
1 c. coconut

CAKE: Mix oatmeal and water and let stand for 20 minutes. Cream and beat well sugars, shortening, salt, eggs, and vanilla. Add to oatmeal. Stir in flour, cinnamon and baking soda. Bake 30 to 35 minutes at 350 degrees on 9 x 13 inch greased and floured pan.

TOPPING: Start 5 minutes before cake comes out of oven. Mix butter, milk, brown sugar and vanilla and bring to a boil (3 minutes). Add nuts and coconut. Blend and spread on top of cake as soon as it comes out of oven.
