STANDARD DIVINITY
2 c. sugar
1/2 c. light corn syrup
1/4 tsp. salt
1/2 c. hot water
2 egg whites
1 tsp. vanilla

Dissolve sugar, syrup and salt in hot water. Cook, without stirring to 248 degrees or the firm ball state (tested in cold water). Remove from heat and pour gradually over the stiffly beaten egg whites, beating constantly with wire whisk or layer spoon. Add vanilla and continue beating until it holds its shape when dropped from spoon. Drop by teaspoonfuls onto waxed paper or spread into a butter pie dish. Cool and cut. NOTE: Should the divinity become too stiff to manipulate, add a few drops of hot water. If for some reason the divinity does not harden, cook it over hot water until the divinity will hold its shape. Chopped nuts, or shredded coconut add interest and should be added during the beating process.
