CHICKEN ESSEX 
2 c. diced chicken
2 c. elbow macaroni, uncooked
2 (10 1/2 oz.) cans mushroom soup
1 soup can milk
1 (13 3/4 oz.) can chicken broth
1 sm. onion, finely chopped
1 (20 oz.) can pimento, diced
1/2 green pepper, finely chopped
1/2 lb. grated Cheddar cheese
1/2 tsp. salt

Combine all in order given. Mix well and pour into a well-greased 9x13 inch baking dish. Cover with foil and refrigerate overnight. When ready to bake, remove foil and bake in 350 degree oven for 1 hour.
