ZUCCHINI BREAD 
3 eggs
1 3/4 c. sugar
1 c. salad oil
2 c. raw zucchini
3 tsp. vanilla
2 tbsp. grated orange peel
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 tsp. cinnamon
1/2 c. raisins
1/2 c. nuts (optional)

Beat eggs and add sugar, salad oil, vanilla, zucchini and orange peel. Mix well. Sift and add flour, salt, soda, and baking powder. Mix well. Add cinnamon, raisins and nuts. Bake in 2 greased and floured 9x4 inch loaf pans for 50 to 60 minutes at 325 degrees. Cool and remove from pan. They freeze well.
