ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 c. shredded zucchini
3 tsp. vanilla
1 tsp. cinnamon
3 c. flour, sifted
1 tsp. baking soda
1 tsp. salt
1 c. raisins or dates
1 c. nuts

Beat eggs, add sugar, oil and zucchini. Mix in vanilla. Sift dry ingredients together and stir in. Add raisins or dates and nuts. Bake in 2 greased and floured loaf pans at 350 degrees for 1 hour or until done. Serve warm with whipped cream or vanilla icing.

VANILLA ICING:

2 tbsp. butter
1 1/2 c. powdered sugar
3/4 tsp. vanilla
Dash of salt
Water as required

Blend ingredients together and spread on cooled loaves.
