DIET CHICKEN SOUP 
2 boneless, skinless chicken breasts
1/2 onion
4 carrots
2 sprigs parsley
1 c. rice
4 stalks celery
3 stalks broccoli
6 mushrooms

Boil chicken, and let cool. Tear chicken off bone and back in broth. Refrigerate overnight. Next morning skim off fat. Cook chicken with onion for two hours. Add the remaining ingredients, except the rice and simmer for 1 1/2 hours. Cook rice by itself, add to the other pot and simmer for 5 minutes.
