OATMEAL CAKE | |
1 1/4 c. boiling water 1 c. oats 1/2 c. butter, softened 1 c. sugar 1 c. brown sugar, packed 1 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla 1 1/2 c. sifted flour 3/4 tsp. cinnamon 1/4 tsp. nutmeg 2 eggs Pour water over oats. Let stand for 20 minutes. Beat butter until creamy. Gradually add sugar and beat until fluffy. Blend in vanilla and eggs. Add oats and mix well. Sift flour, salt, cinnamon and nutmeg together. Add to oat mixture and mix well. Pour into greased and floured 9-inch pan. Bake at 350°F for 50 minutes. Do not remove from pan. Add frosting. Oatmeal Cake Frosting: 1/4 c. melted butter 1/2 c. firmly packed brown sugar 3 tbsp. Carnation milk 1/2 c. chopped pecans 3/4 c. coconut Combine all ingredients. Spread over cake and broil under broiler until bubbly. |
