POOR MAN'S RICE PUDDING 
3/4 c. long grained white rice
2/3 c. sugar (approximately)
4 1/2 c. milk
Approximately 1/2 c. raisins

Wash 3/4 cup of regular rice in boiling water which covers over the rice. Let stand for 30 minutes. Drain water off with a strainer. Place in buttered casserole dish. Add approximately 2/3 cup sugar and 4 1/2 cups milk a swell as a dash of cinnamon. Bake slowly at 300 to 325 degrees for 1 1/2 hours, stirring every 20 to 30 minutes. Then add approximately 1/2 cup of raisins and leave pudding alone until done. Bake 30 minutes more or until desired. This recipe is great for someone on a diet because it can be made with even 1% fat milk as well as with whole milk. This is a very old family recipe. It can share oven space when you are making a roast.
