NEW ENGLAND CLAM CHOWDER | |
1/4 lb. bacon, cut in sm. cubes 1 chopped onion 2 tbsp. flour 3 med. potatoes, peeled and diced 1/2 tsp. salt 1/8 tsp. pepper 3 c. water 2 (7 oz.) cans minced clams 2 c. light cream or evaporated milk Paprika Saute bacon with onions until bacon is fairly crisp; drain fat, add flour and stir. Combine bacon, onion, potatoes, salt, pepper and water in large pot. Cover and cook on low approximately 30-40 minutes - add clams and cream. Cook for approximately 30 minutes. Sprinkle with paprika. 6-7 servings. Can stretch easily by adding another potato and milk or cream. |
