RED BEANS AND RICE 
1/2 lb. pork sausage
2 cans red kidney beans
1 lg. onion, chopped
1 jalapeno pepper, chopped
1 c. rice, cooked in 2 c. boiling water for about 15 minutes

Saute green onions and pork sausage until meat begins to brown and onions are wilted. Add 2 cans of red kidney beans and 2/3 can of water. Simmer for 15-20 minutes. Serve over cooked rice.
