FRESH ORANGE CAKE FILLING AND
FROSTING
 
2 1/2 tbsp. cake flour
1/2 c. milk
1/2 c. shortening
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. coarse chopped nuts
1 c. powdered sugar

Blend the 2 1/2 tablespoon cake flour and the 1/2 cup milk in small saucepan, stir constantly until a thick paste, about 10 minutes. Remove from heat and cool to lukewarm. Cream the 1/2 cup shortening with the 1/2 cup sugar. Add 1/4 teaspoon salt. Add to the paste and beat until fluffy. Fold in the 1/2 teaspoon vanilla and the nuts. Use 1/3 of this mixture for the filling. Blend the remaining 2/3 with the powdered sugar for the frosting.
