JIM'S RABBIT | |
Salt Pepper Butter Lg. rabbit 1/2 tsp. nutmeg 1/2 tsp. cinnamon 2 tsp. fresh horseradish or 1 tsp. powdered 1/2 c. water 1 tbsp. flour 3 tbsp. cold water Cut up rabbit in serving pieces and salt and pepper to taste. Melt a generous amount of butter in a large frying pan and brown all sides of the rabbit well. Remove the rabbit from the pan and put it in a baking pan with a lid. In the melted butter add 1/2 tsp. nutmeg, 1/2 tsp. cinnamon and horseradish. Stir well and then pour on top of the rabbit pieces. Add 1/2 cup water. Put in oven at 350 degrees and bake for one hour. Take 1 tbsp. of flour and mix with 3 tbsp. cold water and mix until there are no lumps in it. Remove the rabbit pieces from the baking pan. Add flour mixture to the liquid left in the pan and stir in well. Boil gently for a few minutes until mixture thickens to make gravy. Serve the rabbit pieces with gravy and potatoes. |
