HOT PEPPER JELLY | |
3 bell peppers (discard seeds, etc.), ground to make 1 c. (blender) 6 whole hot peppers, ground to make 1/2 c. 6 1/2 c. sugar 1 1/2 c. vinegar 1 bottle Certo (liquid gelatin and preservative) 6-9 drops food coloring (red or green, depending on peppers) Boil peppers, sugar and vinegar for about 3 minutes. Strain (we don't strain since we used a blender and it is pulverized anyway.) Again, bring juice to boil, add Certo and food coloring. BOIL 1 MINUTE. Pour into jars and seal. Makes 7 1/2 pints. Serve with cream cheese on crackers. BE SURE TO WEAR RUBBER GLOVES WHEN HANDLING PEPPERS. |
