NUT & NOODLE CASSEROLE WITH
BROCCOLI
 
1 pkg. frozen broccoli spears, cooked & drained
1/2 pkg. broad noodles, cooked & drained
1/3 pkg. feta cheese
1/3 c. Parmesan cheese
1 tbsp. olive oil
1/2 c. plain yogurt
1 egg
1/2 c. shredded Mozzarella
1/4 c. pine nuts
1/2 c. white wine

Cook noodles, drain. Saute pine nuts in olive oil until browned. Mix with noodles. Put in casserole dish. Mix in feta and Parmesan. Place cooked broccoli spears on top of noodles. Pour over all, the wine, yogurt and egg mixture. Top with Mozzarella (shredded). Bake at 350 degrees for 30 minutes.
