BROCCOLI BISQUE 
2 (10 oz.) pkgs. frozen chopped broccoli, thawed
1/2 c. onion, chopped
1 stick butter
2 c. chicken stock
3/4 tsp. basil
1 tsp. salt
1/4 tsp. pepper
1 tbsp. lemon juice
1 c. light cream

In a saucepan, saute onion in butter for 5 minutes. Add broccoli, stock, basil, salt and pepper. Cover and simmer 15 minutes. Puree until smooth in blender or food processor. Add lemon juice and cream. Reheat. Makes 6 servings.

Equivalent amount of fresh broccoli (steamed until tender) may also be used.
