VEGETABLE AND RICE CASSEROLE 
3 tbsp. fat
1/2 c. chopped onion
2 tbsp. chopped pimento (optional)
2 c. canned tomatoes
1 c. canned corn
1 1/2 c. boiled rice
1 hard cooked egg, chopped
2 tsp. salt
1/8 tsp. pepper
1 tsp. Worcestershire sauce
1/2 c. grated cheese

Melt fat. Add onions and cook 3 minutes; add flour and mix well. Add tomatoes and stir until mixture thickens. Add corn, rice and seasonings. Put in baking dish and sprinkle cheese over top; bake in hot oven (400 degrees) for 20 minutes. Any combination of vegetables is good in this dish. Peas, beans, or carrots may be substituted for the corn.
