PINEAPPLE - NUT COOKIES | |
1 c. shortening 1 c. brown sugar 1 c. granulated sugar 1 c. crushed pineapple 1 c. nuts 2 eggs 4 c. flour, sifted 1/2 tsp. salt 1/2 tsp. baking soda 2 tsp. baking powder 1 tsp. vanilla Combine all ingredients in order given; beat until well mixed. Drop by teaspoonfuls onto lightly greased cookie sheets. Bake at 350 degrees until lightly browned. Remove from oven, let cool five minutes before removing from pan. FOR ICING: I use as much confectioners sugar that I think would take to ice cookies. I add pineapple juice instead of water or milk, about 3 ounces cream cheese, and a small amount of butter and 1 teaspoon vanilla. Use enough liquid to make icing spread nice. I usually get about 7 to 9 dozen cookies. |
