OVEN PANCAKES 
3 slightly beaten eggs
1/2 c. flour
1/2 c. milk
1/4 tsp. salt
2 tbsp. melted butter

Beat eggs and slowly add flour, beating constantly. Add milk, salt and butter. Let batter sit for about 15 minutes. Pour into heavily greased pie tins that are smooth and shiny. Bake at 500 degrees about 10 minutes.

Makes 3 oven pancakes. Top with butter, lemon juice and powdered sugar. They are wonderful with fresh fruit also.
