MEATBALL FLORENTINE 
1 lb. lean ground beef
1 c. cottage cheese
1/4 c. Parmesan cheese
1 c. finely chopped onion
1 egg
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder

Combine ingredients and form in 18 (1 1/2 inch) balls. Bake on lightly buttered 9x13 inch pan, 450 degrees, 20 minutes.

SAUCE:

2 c. beef broth
1/4 c. catsup
1/4 c. dry red wine
2 tbsp. cornstarch

Blend together. Pour over meatballs and mix with drippings. Reduce heat to 350 degrees and bake additional 30 minutes. Serve with rice or noodles.

Used turkey instead of beef; did not make sauce but made - two large cans of petite diced tomatoes seasoned with two tablespoons of basil and 1 tablespoon of oregano - put in blender or immersion blender - pour over meatballs and bake.
