CHICKEN CASSEROLE SUPREME 
1 c. chicken, cooked and diced
1 c. celery, cooked and diced
1 c. rice, cooked
2 tbsp. onion, chopped
1 c. chicken soup, undiluted
3/4 c. mayonnaise
1 c. crushed Ritz crackers
1/2 c. melted butter
Salt and pepper to taste
1 can water chestnuts, drained and thinly sliced

Preheat oven to 350 degrees. Mix chicken, celery, rice, soup, mayonnaise, water chestnuts and place in buttered 1 1/2 quart casserole. Mix crushed Ritz crackers with melted butter and spread evenly on top. Bake, uncovered, for 45 minutes. (Turkey can be used).
