ZUCCHINI PINEAPPLE BREAD | |
3 eggs 1 c. Crisco oil 3 c. shredded zucchini 2 c. white sugar 2 tsp. vanilla 1 (8 oz.) can crushed pineapple, drained well 3 c. flour 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. raisins 1 c. chopped nuts Beat eggs; add sugar, oil and vanilla. Sift flour, soda, baking powder, salt; add cinnamon, nutmeg, shredded zucchini, crushed pineapple; add raisins and chopped nuts. Bake at 350 degrees for 1 hour in 2 (8"x8"x2") pans, test with toothpick. Test for doneness after 50 minutes. |
