APPLE MERINGUE SPECTACULAR 
1 (9 inch) pie shell, baked
4 c. canned apples, drained and chopped
1 1/2 c. orange juice
1/2 c. brown sugar
1/2 c. raisins
1/2 tsp. cinnamon
1/2 tsp. nutmeg
4 egg whites
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. sugar

Combine chopped apples, orange juice, 1/2 cup brown sugar, raisins, cinnamon and nutmeg in a saucepan. Simmer for 15 minutes. Spoon into baked pie shell.

Place egg whites, vanilla in a bowl. Beat until slightly stiff. Gradually beat in 1/2 cup sugar. Pile meringue over apple mixture. Spread meringue so it touches inner edge of pastry. Bake in a 350 degree oven for 15 minutes or until meringue is lightly browned.
