LEMON MERINGUE PIE 
FILLING:

1 1/2 c. sugar
2 c. boiling water
4 tbsp. cornstarch, rounded
4 tbsp. flour, rounded
3 egg yolks
Grated rind of 1 lemon
Little orange rind for color
6 tbsp. lemon juice
2 tbsp. butter

Mix cornstarch, flour, and sugar. Add boiling water, stirring constantly. Cook on high for 5 minutes, continuing to stir. Add butter, lemon juice, rinds, and beaten egg yolks. Continue cooking on simmer, stirring until thick.

Cool filling and pour into baked pie shell. Top with meringue. Bake at 350 degrees for 15 minutes or until golden brown.
