5 lbs. flour (20 c.) 2 cakes rapid rise yeast dissolved into 1 1/2 c. warm water into which 2 tsp. sugar have been dissolved 1 tbsp. salt 1 1/2 to 2 pts. warm water, may substitute warm potato water Combine yeast water and potato water in one bowl. Combine flour to water. Knead on floured surface until elastic in consistency. When you think you've finished kneading, knead on and on... get my drift? Lard hands. Grease surface of dough. Place in bowl. Cover. Place in warm spot (top of refrigerator works well). Raise 1 hour or until dough doubles in size. Punch down. Raise again. Punch down again. Divide dough into 5 parts. Form each into ball. Place on cookie sheets and raise an additional 45 minutes, covered. Flatten into oval loaf, 2 inches thick. Flour well. Pierce many times with fork. Bake at 350 degrees until light brown, approximately 35 to 45 minutes. Yield: 5 loaves. |
