FRIED OKRA 
2 lbs. okra, washed & dried
2 or 3 egg whites, beaten almost stiff, not dry, with a pinch of salt

Cut okra 1/2 inch or so or use whole if small. 1/2 c. cornmeal Salt to taste

In plastic bag or a bowl mix last 3 ingredients. Coat okra in egg whites, drop into bag and coat with flour mixture. Fry in hot vegetable oil and drain on paper towels. Serve at once.

This can be frozen after cutting and coating okra in egg whites and enjoyed all winter.
