BEEF CASSEROLE WITH ALMONDS 
1 lb. ground beef
1 c. uncooked rice
2 cans chicken noodle or beef noodle soup
1 c. sliced celery
3 c. water
1 tbsp. soy sauce
1/2 c. slivered almonds

Cook beef until slightly browned, stirring with fork to break up meat. Put in a 3 quart casserole.

Mix remaining ingredients and pour over meat. Cover.

Bake in a moderate oven (350 degrees) 1 hour or until rice is done, adding a bit more water if necessary. (I go a little light on the water and watch it.)

Makes 6 servings.
