FROZEN SALAD (50 SERVINGS) | |
1 (No. 10) can peaches, diced 1 (No. 10) can pineapple, diced 8 bananas, peeled, diced 2 c. cherries, maraschino, diced 40 marshmallows, diced 1 c. mayonnaise 2 c. cream, whipped 2 c. pecans, chopped 1/4 c. sugar 1/4 c. vinegar or lemon juice 1/4 tsp. salt Toss all ingredients lightly, but thoroughly. Pour into freezing trays. Freeze until firm. Cut into oblong pieces; place on lettuce and top with whipped cream or mayonnaise. NOTE: Chopped nuts, shredded coconut or cream cheese may be added to the topping for variation. Omit lettuce and mayonnaise and serve as a dessert. |
