SOUTHWESTERN CHICKEN 
1/2 cup Southwestern seasoning (see below)
1 egg white
4 (6 oz. each) skinned chicken breast halves
vegetable cooking spray

Place 1/2 cup Southwestern Seasoning in a large Ziploc heavy-duty plastic bag.

Lightly beat egg white in a shallow dish; dip chicken into egg white, turning to coat. Add chicken to bag; seal bag, and shake to coat.

Place chicken on a 15 x 10 x 1-inch jelly-roll pan coated with cooking spray.

Lightly coat chicken with cooking spray.

Bake at 400°F for 45 minutes or until done. Reduce heat to 375°F if browning too quickly.

Yield: 4 servings.

SOUTHWESTERN SEASONING:

2/3 c. yellow cornmeal
1/3 c. italian-seasoned breadcrumbs
1/4 c. grated Parmesan cheese
4 tsp. chili powder
4 tsp. ground cumin
4 tsp. garlic powder
1 tsp. sugar
1/2 tsp. ground red pepper

Combine all ingredients in large zip-top heavy-duty plastic bag; seal bag, and shake well. Store tightly sealed in refrigerator, and shake well before each use.

Yield: 1-1/2 cups.

Serving Ideas: Use as a coating mix for poultry, pork, or fish.
