LOUISIANA RICE DRESSING | |
1 lb. ground beef 1 lb. pork sausage, ground 2 lbs. chicken giblets 1/2 pkg. chicken or beef liver 1 onion, chopped 2 garlic cloves, mashed 1/2 bell pepper, chopped 1 c. celery, chopped 1/2 tsp. red pepper 1 tsp. garlic powder Bay leaves (2 or 3) 1 c. rice (not instant) Boil giblets and liver until tender. Add the bay leaves. After cooking, cut up meats and set juices aside. Cook ground beef and sausage. Drain juice. Combine and mix; then add the onions, garlic, peppers, celery and saute for about 20 to 30 minutes. Cook rice, add to meats, and mix thoroughly with juice from giblets. Bake at 375 degrees for 20 minutes. Serves 15. |
