PAGLIA E FIENO - STRAW AND HAY 
4 tbsp. butter
1/2 lb. egg noodles (wide)
1/2 lb. spinach noodles (wide)
1/4 lb. sliced ham, cut into very thin strips
1 c. (8 oz.) frozen peas
1 c. light cream
1 c. grated Parmesan cheese
1/2 tsp. salt and fresh pepper

Cook noodles separately to al dente. Rinse in cold water to stop cooking. Drain and set aside.

Have ready a pan of boiling water in which to reheat noodles.

In a large saucepan over medium heat, place butter, pepper, cream cheese, ham, salt and peas. Bring to a simmer. Place noodles in colander and dip in boiling water. After sauce has simmered for 30-50 seconds, drain noodles and add to sauce. Toss and serve. Serves 6.
