2/3 c. mint jelly 1/4 c. water 1/2 tsp. grated lime peel 6 tbsp. lime juice (fresh) 1/4 c. rum 2 qts. mixed melon balls (or one kind if that's all you have) Fresh mint leaves Combine jelly and water in saucepan. Simmer to melt jelly. Add lime peel and cool. Add lime juice and rum. Pour over melon balls and cover. Chill for several hours. Gently stir 2 or 3 times to distribute sauce. Garnish with fresh mint and serve. Serves 6 to 8. |
