ONION SOUP 
3 tbsp. Mazola oil
4 onions, ratio 1 onion per person, grated in Cuisinart
3 tbsp. flour
5 c. chicken broth or beef broth
Salt to taste (watch here if using canned broth)
1/2 c. dry Sherry
Grated Swiss cheese as needed

Saute grated onion in oil taking care not to cook past transparence. Add 3 tbsp. of flour to onions; stir to mix. Add the liquid, salt if any, bring to a boil and cook 20 minutes. Add sherry.

Put soup in oven proof dishes, slice of French bread on top and cover with grated cheese. Place soup dishes in oven proof pan under broiler.
