BEEF AND CORNBREAD LOAF 
1 (6-8 oz.) pkg. corn bread stuffing mix
7 med. onions
2 lb. ground beef
1 med. green pepper, minced
2 eggs
1/4 tsp. pepper
Salt
2 tbsp. salad oil
1 tsp. seasoned pepper
Prepared mustard

Preheat stuffing mix as package directs. Mince 1 onion. In large bowl, mix prepared stuffing, minced onion, beef, green pepper, eggs, pepper and 1 teaspoon salt.

In a 12 x 8 inch baking dish, shape mixture into an 8 x 5 inch loaf. Bake in at 350 degree oven for 1 1/2 hours.

About 30 minutes before meat loaf is done, slice remaining 6 onions. In a 10 inch skillet, over medium high heat, in hot salad oil, cook onion slices and 1/4 teaspoon salt until tender, about 15 minutes, stirring frequently.

Arrange meat loaf on platter; arrange onions around meat loaf. Sprinkle seasoned pepper on onions. Makes 10 servings.
