1 box Jiffy corn muffin mix
1 (10 1/2 oz.) frozen chopped broccoli, thawed
1 green pepper, chopped
1 med. onion, chopped
4 oz. Cheddar cheese, grated
3 eggs
3/4 stick butter, melted

Mix all ingredients well and spoon into muffin tin that has been sprayed with Baker's Joy.

Bake at 350 degrees for about 30 minutes or until done.
