LIME SWEET PICKLES | |
7 lbs. sliced cucumbers (do not peel) 2 c. lime (1 sm. bottle of slaked lime makes 1 gallon) 2 gallons cold water Wash and slice pickles. Place in a stone or enamel container. Mix lime with water and pour over pickles. Let set overnight. Next morning, drain, wash pickles thoroughly in cold water, cover with cold water, and let set for 4 hours. Drain. Cover with this mixture of: 8 c. vinegar 1 tbsp. celery seed 1 tbsp. pickling spice 1 tsp. whole cloves 1 tbsp. salt A drop or two of green food coloring Let set overnight. In the morning, bring to a boil and cook until clear, glossy color, 35 minutes or longer. Put in jars and seal and put in canner 5 minutes. Yield: makes 5 pints. (9 pints) |
