PLUM PUDDING 
1 env. unflavored gelatin
1/2 c. cold water
1 c. milk
3 tbsp. cocoa
1/4 c. chopped nuts
1/2 c. sugar
1/4 tsp. vanilla
1/2 c. raisins
1/4 c. currants
2/3 c. chopped dates
1/4 tsp. salt
2 egg whites

Put milk with chopped fruit in heavy pan. When cooked slightly, add cocoa which has been mixed with some of the sugar and a little milk to make a smooth paste. Soften gelatin in cold water. Add to the chocolate mixture and stir until dissolved. Add all of the sugar and salt and stir thoroughly.

Remove from fire, cool, and when mixture begins to thicken, add nuts and vanilla and lastly fold in stiffly beaten egg whites. Turn into a mold that has been rinsed with cold water. Chill. Serve with whipped cream. Yield: 6 servings.
