PICKLED BOLOGNA 
3/4 lb. ring bologna or jumbo bologna in 1 piece
1 sm. onion, thinly sliced
1/2 c. apple cider vinegar
2 tbsp. salad oil
2 tbsp. chopped green pepper
2 tbsp. chopped pimento
1 clove garlic, minced
1/2 tsp. salt
Dash of pepper
Dash of paprika

Remove casing from bologna, cut bologna into bite-size chunks and place in a bowl with onion. Combine vinegar and remaining ingredients in a jar, shake well. Pour over bologna and onion. Cover. Chill at least 24 hours; stir occasionally. Serve bologna and marinade in decorative bowl. Spear with toothpicks. Makes 40-50 appetizers.
