VEGETABLE LASAGNA CURLS 
12 lasagna noodles
1 lb. low fat cottage cheese
1-2 c. (1 bunch) broccoli flowerets
1 c. chopped fresh mushrooms
2 green onions, chopped
1 tsp. basil
1 tsp. oregano
2 tbsp. fresh parsley, chopped
2 c. Hunts spaghetti sauce
2 tbsp. Parmesan cheese

Preheat oven to 375 degrees. Cook lasagna noodles 8 to 10 minutes until tender but firm. Drain, rinse, keep in cold water until needed.

Mix remaining ingredients except sauce and cheese in a small bowl. Place about 1/4 cup of mixture on each noodle. Roll up noodle to enclose filling. Spray baking pan with non-stick spray. Place rolls seam side down.

Cover with spaghetti sauce and sprinkle with cheese. Bake 20 minutes, covered. Remove cover and bake 20 minutes more. Makes 6 servings.
