WHOOPIE PIES (I) 
2 1/3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 1/2 c. white sugar
1 c. shortening
2 eggs
1 tsp. vanilla
1/2 c. sour milk
1/2 c. cocoa
1/2 c. hot water

Cream sugar, shortening, eggs, milk, and vanilla. Add cocoa and water. Add dry ingredients. Drop by tablespoon on greased cookie sheet. Bake 15 minutes at 350 degrees. Cool.

FILLING:

2 1/2 tbsp. flour
1/2 c. milk

Cook over low heat (stirring constantly) until thick. Let cool. Then add:

1/2 c. confectioners' sugar
1/2 c. shortening

Cream and then add 1 teaspoon vanilla - beat until fluffy.

Put filling between each set of two cookies - I like to wrap and freeze cookies individually. They are great for lunch boxes.
