PASTA E FAGLIOLI (ITALIAN BEAN
SOUP)
 
Olive oil
2 onions, chopped
8 oz. tomato sauce
Salt and pepper
Oregano
Minced parsley
1 lb. #48 ditalini pasta
1 lb. can white or red beans

Cover the bottom of a medium saucepan with olive oil. Saute the onions until tender, then add tomato sauce. Add seasonings and bring to a simmer.

Meanwhile, have the pasta cooking. Drain the beans and add them to the tomato sauce. When pasta is cooked, take out enough water so the pasta is just covered. Add the sauce and beans to the pasta and the remaining cooking water. Simmer for a few minutes. Serve hot. Serves 6-8.
