“BANANA BREAD” IS IN:
NEXT RECIPE:  BANANA NUT BREAD

BANANA BREAD 
2 1/2 cups white or white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups over-ripe mashed bananas
4 eggs, beaten
1 cup chopped nuts
1 tablespoon banana liqueur or dark rum

Preheat oven to 350°F.

Combine flour, baking soda and salt; stir to mix well.

In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.

Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.

Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).

Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.

Serve with whipped cream cheese spread on each slice.

Delicious, even better with freshly macerated strawberries and homemade whipped cream. Or serve warm with Strawberry Philadelphia cream cheese spread. YUM!

Love this recipe! This is the only banana bread recipe I have ever made and have made it 3 times. Comes out nice and moist every time and have received tons of compliments. I use Namaste gluten free flour with same measurements and it works wonderfully. I also add cinnamon per my husbands request and I have a loaf in right now with chopped up strawberries per my sons request. Thank you so much for sharing your recipe!

Trying it for the first time, put chocolate chips in with the nuts and used 1 cup of Splenda in place of 1 of the cups of sugar. It is in the oven now, can't wait to try it after reading all the reviews.

I made this yesterday & it was moist & flavorful. One substitution, though. No Rum in the house but used Evan Williams Kentucky Bourbon with very nice results! This recipe was easy & had the ingredients I usually have in the house. I also appreciate Liz (Virginia) suggestion of using a Bundt pan & 6 muffins... spot on!
