3/4 c. reduced calorie butter, softened 1 1/2 c. firmly packed brown sugar 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. ground cloves 2 eggs, beaten 1 tbsp. milk 2 1/2 c. all purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1 c. raisins, chopped 1/2 c. chopped pecans Combine butter, sugar and spices, beating well. Add eggs and milk; beat until well blended. Sift together flour, soda, and salt in a medium mixing bowl. Add to creamed mixture, stirring well. Fold in raisins and pecans. Drop dough by heaping teaspoonfuls 2 inches apart onto cookie sheets coated with vegetable cooking spray. Flatten each cookie slightly using the back of the spoon. Bake at 350 degrees for 12 minutes. Remove to wire racks to cool. Store in airtight containers. Yields 5 dozen; each cookie contains 72 calories, 2.5 g fat and 49 mg sodium. |
