BEEF SOUP 
1 pkg. short ribs
4 carrots
4-5 stalks celery
1 lg. onion
1 med. can tomatoes, drained
1 tbsp. salt (less to taste)
Few dashes of pepper
Freshly chopped parsley
Egg noodles or any tiny size pasta

Rinse meat, put in large pot and cover with water. Bring to a boil. Lower heat, boil slowly. Skim off the scum as it comes to the top. Let soup boil while you prepare the vegetables.

Clean and cut up carrots, celery, and onion. Add to pot along with tomatoes, salt and pepper. Let cook slowly for 1 1/2 to 2 hours. Last 1/2 hour, add parsley. When soup is done, take out meat. Strain the soup and keep only carrots. Cut up meat and carrots and return to soup. Cook noodles or pasta according to directions. Add to soup.
