BROCCOLI PIE 
1 bunch broccoli
2-3 eggs
1 c. low-fat cottage cheese
1 c. Velveeta (mild Mexican), cubed
1/4 c. chopped green onion
Dash nutmeg
1 pie shell, unbaked
Mustard, your preference
Parmesan or bread crumbs
Pepper

Steam or microwave broccoli until just tender and combine with eggs, cheeses, onion and nutmeg in blender. Blend until just mixed.

Brush pie shell with mustard (if desired) and fill with blended mixture. Top with Parmesan and/or bread crumbs, pepper. Bake at 375 degrees for 35-45 minutes until brown and set.

Since microwave ovens vary in power, you may need to adjust your cooking time.
