POTATO `N BROCCOLI SUPREME 
3 c. hot mashed potatoes
1 (3 oz.) pkg. cream cheese, softened
1/4 c. milk
1 egg
2 tbsp. butter
1 can (8 oz.) onion rings
2 (10 oz.) pkg. frozen broccoli, cooked & drained
1 c. shredded American cheese (4 oz. solid)

Whip together first 5 ingredients until smooth. Season to taste with salt and pepper. Fold in 1/2 can onion rings. Spread potato mixture over bottom and sides of buttered 8 x 12 inch baking dish to form a shell. Bake uncovered, at 350 degrees for 25-30 minutes. Arrange hot broccoli spears in potato shell. Sprinkle with cheese and remaining onion rings. Bake, uncovered, 5 minutes longer. Serves 8.
