SPEEDY CHEESE CAKE 
Unbaked graham cracker crust
1 (8 oz.) cream cheese, softened
1/2 c. sugar
1 tbsp. lemon juice
1/2 tsp. vanilla
2 eggs
Dash of salt

Beat cream cheese until fluffy. Add sugar, lemon juice, vanilla and dash of salt. Add eggs, beating after each addition. Pour into graham cracker crust, then bake 30 minutes at 325 degrees.

Meanwhile, combine 1 cup sour cream, 2 tablespoons sugar, 1/2 teaspoon vanilla. Spread on pie. Bake 10 minutes longer. Then cool. You can add fruit topping. Omit sour cream topping, if you use fruit topping.
