STUFFED SQUASH 
Yellow squash (sm. to med. in size)
Chopped onions, sauteed in butter
Chopped green pepper, sauteed in butter
Toasted bread crumbs
1 egg
Bacon

Boil squash in salted water just until tender. Scoop out insides and drain. Add onions, green pepper, bread crumbs, egg, salt and pepper to the squash (the stiffer the better). Refill squash shells and wrap in bacon. Bake at 350 degrees about 30 minutes, until bacon is crisp.
